Honey & Sea Salt Toasted Almond Butter

I adore nut butters of all kinds whether it be cashew, peanut, almond or brazil. I slather it on pancakes, have it on toast with banana and chia seeds, use it to make cookies, put it in curries and simply eat it out of the jar with a spoon! I also love it in smoothies or on top of smoothie bowls. This home-made honey & sea salt almond butter is another level of deliciousness, and I don’t think I can ever go back to regular shop bought peanut butter now!

One thing that is essential to make nut butter is a high powdered blender. The first time I made it I ended up breaking my old food processor and I was devastated as you can imagine. I recently received a new blender  – The Optimum 9200 – which is very much up to the job, and makes nut butter in 2 minutes flat!!

Almond butter is packed with nutritional benefits too; its a good source of protein, contains lots of healthy fats, and is a great source of antioxidants and magnesium. I’m not sure about you, but I kind of want to dive face first into the jar! I am very exited to experiment with lots of other home-made nut butter combinations now! I think a spicy one may be next on the cards!

Ingredients 
2 mugs of almonds,
1 tbsp Wedderspoon Organic Rata Honey,
1 tsp himalayan pink salt.

Instructions
Preheat your oven to gas mark 7/200C.
Pour your nuts onto a baking tray and roast them in the oven for 10 minutes until toasted and aromatic. Leave the nuts to cool for about ten minutes.
Once cooled, add the nuts, honey and salt to your blender. Blend until smooth. You may have to stop and stir the mixture a few times to make sure it’s all blended well.
Pour your nut butter into an air-tight jar and enjoy!
